Brownie Heaven!

Despite my unrelenting sweet tooth, chocolate is not my favourite thing. I definitely enjoy a good bar of chocolate every now and then and you can't beat a thick slice of chocolate cake but I never really crave chocolate. However these dark chocolate brownies may have me converted.


This is a pretty straight forward recipe with not too many ingredients so it's good for a lazy Sunday when you fancy a chocolate fix.

Dark chocolate brownies - makes 9 brownies



Ingredients:
185g dark chocolate (I used Lindt 85% Cocoa dark chocolate)
185g unsalted butter, cubed
40g cocoa powder
3 large eggs, room temperature
275g caster sugar
100g milk chocolate (I used Lindt Extra Creamy milk chocolate), chopped into small pieces
85g plain flour

1. Preheat the oven to 180c and prepare a 20cm baking dish or tray by lining the bottom with a square of greaseproof/baking paper
2. Melt the butter and dark chocolate together in a bowl over a pan of simmering water. Stir until fully melted and combined. Take off the heat and leave to cool while preparing with the rest of the ingredients
3. In a mixing bowl, sieve the cocoa and flour together
4. Using an electric whisk, mix the eggs and sugar together in a bowl until the mixture is thick and creamy
5. Pour the cooled chocolate mix into the egg mixture and gently combine, making sure not to stir too vigourously so you don't knock all the air out of the mixture
6. Sieve the cocoa and flour mixture over the chocolate mix and gently combine again until gooey and fudgy. Add the milk chocolate bits and combine until just mixed
7. Pour the mixture into the prepared baking dish. Use the back of a spoon to spread the mixture evenly in the dish
8. Place in the middle of the oven and bake for 25 minutes. Leave to cool in the dish



And there you have it, perfectly decadent chocolate brownies. When the top is papery and the middle is gooey but solid, you know you're onto a good thing.

You can eat them straight out the dish or warm in the microwave and serve with vanilla ice cream. I always choose the latter. Enjoy!
