Now normally I'm not a big muffin-type of girl but I had some cooking chocolate that had been sitting in the cupboard a while and I had an event I needed to bring cake to so I thought why not? Let's try making some simple chocolate chunk muffins.
This was the first time I'd tried out this recipe and I baked them just this side of being too baked. They're quite firm on the outside but the inside is moreishly tasty. And you can make a big batch in less then an hour with ingredients you probably already have in your pantry. Easy!
Ingredients (makes 12-14 standard-sized muffins)
330g plain flour
4tsp baking powder
1 tsp salt
2 eggs
200g caster sugar
240 ml milk
120 ml vegetable oil
1/2 tsp vanilla extract
170g chocolate chips/chunks (I used a bar of cooking chocolate broken up into chunks)
1. Preheat the oven to 220c and line a muffin tins with papercases or grease with butter if you're not using cases
2. Mix the flour, baking powder and salt in a bowl
3. Mix the the eggs, sugar, milk, oil and vanilla in a large bowl until combined
4. Add the wet mixture to the dry ingredients and stir until the mixture is only just combined and lumpy
5. Add the chocolate and stir a few more times until it's well incorporated
6. Spoon the mixture into the cases, filling right up to the top
7. Bake in the oven for 5 minutes at 220c then turn down to 190c and bake for a further 12-15 minutes
8. Leave to cool in the tins for 15 minutes
They tasted great fresh and warm out the tin but they'll last for a good few days if you have the will power!
