Recipe: All American Pancakes

I'm pretty much addicted to pancakes. And I love all types of pancakes - American pancakes, scotch pancakes, crepes, hot cakes and English pancakes. Despite being a Brit, my favourite has to be American pancakes. Done right, they should be fluffy and thick. It is one of the few things I could eat everyday and never get tired of. Thankfully it's quite a simple dish to make, once you have the right recipe. And I have the right recipe here for you.




 

I have been constantly looking for the perfect American pancake recipe and have been experimenting for ages. This recipe is quick and simple to make and you can have a stack of delicious pancakes in no time.

Makes about 6 medium sized pancakes.

Ingredients:
1 cup of milk
2 tablespoons of lemon juice
1 cup of plain flour
2 tablespoons of caster sugar
1 teaspoon of baking powder
1/2 teaspoon of baking soda
1 egg
2 tablespoons of butter, melted and cooled
A pinch of salt

 1. Combine the milk with the lemon juice and leave to 'sour' while you prepare the rest of the  ingredients.
2. Sift the flour into a large mixing bowl and add the sugar, baking powder, baking soda and salt and mix.
3. Add the egg and butter to the milk and whisk. Once mixed add to the dry ingredients. Combine until smooth.

If you have time, leave the batter to rise for 20-30 minutes. If you can't wait, don't worry, you'll still have delicious pancakes, they might just not be as fluffy.

Now for the fun part, heat a frying pan over a medium heat until hot. You can use a non-stick frying pan or grease with a bit of butter or oil. Ladle about a quarter of a cup of batter onto the frying pan. Leave to heat for about a minute until bubbles start to appear and the edges firm up.


Flip the pancake and heat on the other side for about another minute. The pancake should rise up a bit.



Whatever you do, don't press down on the pancake to cook quicker. You flatten all the fluff out of it.

Turn over again to check it's cooked and voila, serve immediately and top with anything you wish! Maple syrup, honey, strawberries, chocolate sauce, whipped cream, ice cream, banana, nuts and anything else you can get your hands on!

My personal preference is banana slices, peanut butter and vanilla ice cream. Melt the peanut butter in the microwave for about 20 seconds (be careful not to burn it!) for gooey, banana-ery goodness!

I can pretty much demolish the whole plate in 5 minutes! 


This time I added whipped cream. I was really craving sugar.
